This is what my mother used to cook for my sisters and me. She often used thinly sliced off-cut beef or pork, but minced meat is easier for me. Today I cooked Onion and Shiitake with mince, but you can cook whatever you have. When I was a little girl, it was such a fun moment to break the omelette and discover what was inside. This kind of food experience is so precious for children.

Ingredients

Eggs 4 *2 eggs per serving
Beef Mince 150 to 200g
Onion 1/2 *thinly sliced
Mushrooms of your choice 2 to 3 *thinly sliced
Oil for cooking
Salt
Garlic Powder *optional, you can add grated Garlic
Pepper
Tomato Sauce (Ketchup)

Method
  1. Heat 1 teaspoon Oil in a frying pan over medium heat, cook Mince, Onion and Mushrooms (I used Shiitake) and season with Salt, Garlic Powder and Pepper. Transfer to a plate.
  2. You will cook two omelettes separately. Place 2 Eggs in a bowl and lightly whisk, season with 1 pinch of Salt. Heat 1 tablespoon Oil in a small frying pan or wok, cook the egg mixture to form a flat round omelette. Do not over cook.
  3. Place a half of the mince mixture on the omelette, fold both sides of the omelette to cover the mixture, then slowly move it to the edge of the pan and flip it onto the plate. Alternatively you can just fold the omelette in half.
  4. Drizzle plenty of Tomato Sauce (Ketchup) on top and serve.
