My Family’s Potato Salad is a special salad for us. Everyone loves it and it always reminds us my mother’s kitchen. It is not hard to make but it is time consuming. This ‘Broccoli Potato Salad’ is almost identical but much easier to prepare as I don’t mash the Potatoes. A whole head of Broccoli is in it. It’s nutritious and delicious.

Ingredients

2 to 3 Potatoes *peeled and cut into bite-size pieces
1 head Broccoli *cut into small florets and pieces
1 Cucumber OR 1/2 Continental Cucumber
4 to 6 slices Ham *cut into small pieces
1/4 Onion *thinly sliced
1/2 cup Kewpie Mayonnaise
Salt & White Pepper
2 to 3 teaspoons Whole Grain Mustard *optional

Method
  1. Thinly slice Cucumber into a bowl, add a pinch of Salt and massage, then set aside for a while.
  2. Cook Potato pieces in salted water. When almost cooked, add Broccoli and cook them together.
  3. When cooked, drain very well and place in a mixing bowl. Lightly season with Salt & White Pepper.
  4. Squeeze the salted Cucumber to remove excess water, and add to the bowl. Add Ham, Onion, Mayonnaise and Whole Grain Mustard as well. Then mix to combine.
