I often cook ‘Goma-ae’ dishes. I use a variety of Vegetables as ‘Goma-ae’ sauce is so versatile and matches for many Vegetables. The sauce’s ingredients are always the same. I use Toasted Sesame Seeds, Sugar and Soy Sauce, though the ratio of those three ingredients is sometimes different. It seems my family members love the flavour as they have never complained about ‘Goma-ae’ dishes I cook so frequently. Today I used Broccoli and Corn, and I added a small canned Tuna. Mmm… delicious!

Ingredients

1 head Broccoli *cut into small florets, thick stem sliced
1 pinch Salt
1/2 cup Frozen Corn Kernels
1 can (95g) Tune *I used Tune in Springwater
1/8 Red Onion *thinly sliced

‘Goma-ae’ Sauce
2 tablespoons Toasted Sesame Seeds *ground
1 tablespoon Sugar
2 tablespoons Soy Sauce
Ground Chilli *optional

Method
  1. Steam OR pan-steam Broccoli. Boiling is not recommended. *Note: Broccoli should remain crunchy.
  2. How to Pan-steam: Drizzle a small amount Oil over a frying pan, arrange Broccoli pieces, sprinkle with 2 tablespoons Water and 1 pinch Salt. Cover with a lid and cook over medium heat for a few minutes until water in the pan is evaporated.
  3. To make ‘Goma-ae’ sauce, toast Sesame Seeds in a saucepan until golden, then grind until aromatic. Do not over grind. Then add Sugar and Soy Sauce, and mix well. *Note: A little bit of Chilli can be added.
  4. Place Broccoli pieces in a mixing bowl, add 1 pinch Salt if you haven’t added it, add Frozen Corn Kernels, drained Tuna, sliced Onion and ‘Goma-ae’ sauce. Mix to combine.
