Japanese Mayonnaise and Curry flavour are a good match. One example is my ‘Curry Flavoured Smoked Sausage & Potato Salad’ that I cook quite often. This Egg Salad is perfect for sandwich filling. You may wish to cut Eggs into larger pieces to make a side dish. Boiled Cauliflower or Potatoes can be a good addition to this salad.

Ingredients

2 Boiled Eggs *finely or coarsely chopped
1 tablespoon finely chopped Onion
1 tablespoon finely chopped Parsley
1-2 tablespoons Japanese Mayonnaise
1 teaspoon Curry Powder
1 tablespoon finely chopped Pickled Cucumber *optional
Salt & Pepper

Method
  1. Cut Boiled Eggs finely, coarsely, or even into chunkier pieces depending on how you eat this salad.
  2. Add all other ingredients and mix to combine. Season with Salt & Pepper to taste.
