Daikon_Rocket_Salad
At the end of last summer, I sowed Rocket (Rucola) seeds in my veggie gardens. Through the very wet Autumn, my rockets have been grown so well and now we have to eat them. This is my accidental invention using my ‘Creamy Sesame Dressing’. The accidental part was that I had a piece of Parmesan cheese in my mouth when I tasted the salad. ‘Wow! It tastes good with Parmesan!’ I added some shaved Parmesan cheese to the salad and the recipe was completed.

Ingredients

Daikon 1 medium size
Rockets 2 to 3 good handfuls
Parmesan Cheese
Salt

Creamy Sesame Dressing

Toasted Sesame Seeds 2 tablespoons *ground
Japanese Mayonnaise 2 to 3 tablespoons
Soy Sauce 1 tablespoon
Garlic 1 clove *grated
Rice Vinegar 1/2 to 1 tablespoon

Method

1. Slice Daikon into thin strips, using a vegetable slicer if you have one. Add a pinch of Salt and give a gentle massage.
2. Cut Rocket about 1cm. Make Creamy Sesame Dressing by mixing all ingredients.
3. Combine Daikon, Rockets and the dressing well, then scatter with shaved parmesan.
