Onion & Balsamic Sauce

Ingredients
Red Onion 1/6 to 1/4 *very finely chopped
Garlic 1 small clove *very finely chopped
Aged Balsamic Vinegar 2 tablespoons
Extra Virgin Olive Oil 2 tablespoons
Parsley 1 tablespoon *finely chopped
Basil 1 tablespoon *finely chopped, OR 1 teaspoon Italian Herb Mix
Whole Grain Mustard 2 teaspoons
Salt 1/2 teaspoon
Freshly Ground Black Pepper 1/4 teaspoon
Method
Combine all ingredients and allow to rest for at least 1 hour.


Ponzu Based Dressing

Ingredients
Ponzu 4 tablespoons *See ‘Dipping Sauce’ page
*Note: Alternatively mix 2 tablespoons Soy Sauce, 1 tablespoon Rice Vinegar, 1 tablespoon Citrus Juice (Lemon, Lime or Yuzu) and 1/2 teaspoon Sugar (*optional)
Additional Ingredients
Toban Djan (Chili Bean Sauce) 1 teaspoon
Chilli Garlic Sauce 1 teaspoon
Fresh Chilli 1 *finely chopped
Garlic 1 clove *grated
Ginger 1 small piece *grated
Sesame Oil 1 teaspoon
Wasabi 1 teaspoon
Hot Mustard 1 teaspoon
Toasted Sesame Seeds 2-3 teaspoons
Onion 1 tablespoon *grated
Method
Mix ‘Ponzu’ with any additional ingredients of your choice.


My Legendary Caesar Dressing

Ingredients
Anchovy Filets 8 to 10 *finely chopped
Garlic 1 clove *grated
Parsley 2 tablespoons *finely chopped
Whole Grain Mustard 2 teaspoons
Tabasco 1 teaspoon
Worcestershire Sauce (‘Lea & Perrins’) 1 teaspoon
Red Wine Vinegar OR White Wine Vinegar 2 tablespoons
A pinch of Sugar
Egg Yolk 1
Olive Oil 3/4 cup
Method
Place all ingredients except Olive Oil in a bowl and mix well. Whisk in 3/4 cup Olive Oil, a very small amount at a time, whisking constantly until thick and creamy.


Dressing_Soy_Ginger

Soy Ginger Dressing

Ingredients
Rice Vinegar 1 tablespoon
Lemon Juice 1 tablespoon
Soy Sauce 2 tablespoons
Vegetable Oil 3 tablespoons
*You may wish to use Sesame Oil instead. Use less amount…
Ginger 1 small piece *grated
Method
Grate ginger and combine all ingredients and mix well. Some fresh/dry Chili or Garlic can be added.


Dressing_Creamy_Sesame

Favourite Sesame Dressing

Ingredients
Toasted Sesame Seeds 2 tablespoons *ground
Japanese Mayonnaise 3 tablespoons
Sugar 1 teaspoon
Rice Vinegar 2 teaspoons
Soy Sauce 2 teaspoons
Method
Ground Toasted Sesame Seeds, then combine all and mix well.


Dressing_Creamy_Sesame

Creamy Sesame Dressing

Ingredients
Toasted Sesame Seeds 2 tablespoons *ground
Japanese Mayonnaise 3 tablespoons
Soy Sauce 1 tablespoon
Ginger 1 small piece * grated
Garlic 1 clove *grated
Rice Vinegar 1 tablespoons
Mirin 1/2 to 1 tablespoon *optional
Method
Ground Toasted Sesame Seeds, grate ginger and garlic, then combine all and mix well.


Dressing_Wasabi_Soy

Wasabi Dressing

Ingredients
Wasabi 1 to 2 teaspoons OR more!
Rice Vinegar 1 to 2 tablespoon
Soy Sauce 2 tablespoons
Vegetable Oil 2 tablespoons
Method
Combine all ingredients and mix well.
*Finely chopped Spring Onions can be added. If you find it too strong, add small amount of Dash Stock.


Dressing_Wasabi_Mayo

Wasabi Mayo Dressing

Ingredients
Wasabi 1 to 2 teaspoon OR more
Japanese Mayonnaise 3 tablespoons
Mentsuyu 1 to 2 tablespoons (or Soy Sauce 1/2 to 1 tablespoon)

Method
Combine all ingredients and mix well until Wasabi is well dissolved.
*Coarsely mushed Avocado can be added! Wasabi and Avocado are a really good match.


Dressing_Sumiso

Sumiso (Vinegared Miso Dressing)

Ingredients
Miso 2 tablespoons *lighter colour Miso recommended
Sugar 1 tablesspoon
Rice Vinegar 1 to 2 tablespoons *I use 1 & 1/2 tablespoons
Hot Mustard 1 teaspoon *optional
Method
Combine all ingredients and mix well.
*This dressing is so good with boiled Octopus or Squid, and also fresh Konnyaku.
