I am writing this recipe for my son and daughter. When they were young, I cooked this Egg-only fried rice quite often because they asked me to cook it. They say it was one of their favourites and they are still fond of it. I always use dried Chopped Chives for this dish, and another essential ingredient is Ground Paprika. I first added it because I wanted to make the fried rice slightly orange colour. This fried rice seems to be something special for my children.

Ingredients

Eggs 2 to 3
Dry Chopped Chives 1 tablespoon
Canola Oil 1 tablespoon
Cooked Rice 2 servings *about 360g, warmed
Salt 1/4 teaspoon
White Pepper 1/8 teaspoon
Ground Paprika 1/4 teaspoon
Asian Chicken Bouillon Powder 1/4 teaspoon
Garlic Powder 1/4 teaspoon

Method
  1. Combine all seasonings in a small bowl.
  2. Place Eggs, Chives and 1 pinch Salt in a bowl and lightly whisk.
  3. The cooked rice should be warm. If you use cold left-over cooked rice, warm it in the microwave.
  4. Heat Canola Oil in a large frying pan or wok. When the Oil is hot, add the egg mixture, which should start cooking immediately, add warmed rice. Cook stirring, add seasoning mixture and combine well.
