This is one of my favourite dips and bread spreads. It is so tasty and refreshing. ‘Guacamole’ is traditionally made by mashing Avocado(s) and Salt, but you can find so many different recipes these days. Many of them require Coriander, which my husband and son hate. They are genetic Coriander haters. They just can’t identify Coriander as an appetising food. If you are a Coriander lover, just simply add 2 tablespoons chopped Coriander.


Ingredients

Ripe Avocado 1
Juice of 1/2 Lime
Red Onion 2 tablespoons *finely chopped
Garlic 1 clove *finely chopped
Chilli 1 *finely chopped, or 1/4 teaspoon Ground Chilli
Tomato 1/2 to 1 *seeds and pulp removed, chopped
Salt & Pepper

Method
  1. Place the Avocado flesh in a medium bowl and use a fork to mash.
  2. Add Onion, Garlic, Tomato, Chilli and Lime Juice and mix well. Season with Salt and Pepper.
  3. Enjoy with Corn Chips or Flat Bread.
