Sweet Miso & Walnut Sauce is very versatile. You can add it to Grilled Tofu or Eggplant. You can mix it with vegetables such as ‘Kurumi-ae Spinach’, or with Harusame noodles like this dish. Walnuts can be replaced by toasted sesame seeds or other toasted nuts.

Harusame Noodles 100g
Carrot 1 *sliced into thin strips
Spinach OR Baby Spinach as required
Miso 1 tablespoon *lighter colour miso recommended
Soy Sauce 1/2 to 1 tablespoon *depends on the saltiness of Miso
Mirin 1 tablespoon
Sugar 1 tablespoon
Toasted Walnuts 2 to 4 tablespoons *finely chopped
Ginger 1 small piece *grated

  1. Cook Harusame Noodles in boiling water until turns transparent. When noodles are almost cooked, add Spinach to blanch. Alternatively Spinach can be cooked separately. Rinse in cold water and drain well.

  2. Place Miso, Soy Sauce, Mirin, Sugar, Walnuts and Ginger in a large bowl and mix well.

  3. Add Harusame Noodles and the vegetables and combine well.
