If you are after a green sauce for your Panna Cotta, Ice-Cream or a creamy dessert, try this Kiwi Fruit Sauce. Simply just strain Kiwi Fruit purée, or finely grated Kiwi Fruit, through a fine sieve. For grown-ups, you may wish to add some liquor/liqueur. Today I enjoy the sauce with Panna Cotta.


Makes

2 to 4 Servings

Ingredients

2 Kiwi Fruit
2 tablespoons Caster Sugar
2 tablespoons Water
1/2 to 1 teaspoon Lemon Juice
1 teaspoon Brandy, Sherry, Kirsch, Rum, etc. *optional

Method
  1. Place Caster Sugar and Water in a bowl, heat in the microwave for 1 minute to make syrup, and set aside.
  2. Make Kiwi Fruit purée. Peel skin and remove hard bits. Then, using a hand blender or a fork, carefully blend or mash the flesh. Do not crush the seeds. Alternatively, you can finely grate the Kiwi Fruit.
  3. Strain the purée, or finely grated Kiwi Fruit, through a fine sieve. Combine with syrup, Lemon Juice and the liquor/liqueur of your choice if you add any.
