On the other day, I attended a cheese making class at our community house and learned how to make four different cheeses. One of them was Fetta. Before being marinated in the brine, the Fetta cheese tasted bland. Then I thought about people saying Tofu tastes bland. If they don’t eat Tofu because of its bland taste, why don’t we salt it like Fetta? Once Tofu is salted, we can marinate it like marinating Fetta. The result was great. No one would say Tofu tastes bland if they tried this ‘Marinated Tofu’.


Ingredients

400 to 500g Firm Tofu
1 cup Cold Water
1 teaspoon Salt

Marinade

2 Cloves Garlic *crushed
1/2 cup Olive Oil
1-2 tablespoons Lemon Juice
Herbs and/or Spices of your choice *optional
*Note: This time, I used Lemon Zest, Dry Italian Herb Mix, Fresh Tarragon and Black Pepper.

Method
  1. Mix Cold Water and Salt to make salty water. The saltiness is up to your preference.
  2. Cut Firm Tofu into small cubes, place in a container and cover with the salty water. I recommend to keep in the fridge overnight.
  3. Next day, discard the salty water. Combine crushed Garlic cloves, Olive Oil, Lemon Juice, Herbs and/or Spices of your choice and the salted Tofu in a clean container. Place in fridge for at least 2 days to allow flavours to develop.
  4. Herbs & Spices: Black Pepper Corns, Chilli, Capers, Olives, Bay Leaves, Lemon Zest, Basil, Oregano, Thyme, Rosemary, Tarragon, Dill, etc.
