‘Katsu’ is a Japanese abbreviation for cutlets. Following the pattern of naming Don (rice bowl), cutlets on rice is called ‘Katsu Don’. Serve this ‘Katsu Don’ with Miso Sauce is ‘Miso Katsu Don’. It’s a pretty popular dish in Kurashiki City where I used to live.
Cooked Rice ½ bowl each
Shredded Cabbage as required
Tonkatsu (Pork Cutlets) 4
Miso-dare (Sweet Miso Sauce) Ingredients
Miso 3 tablespoons
Sugar 1 tablespoons
Mirin 2 tablespoons
Soy Sauce 1 tablespoons
*Adjust the amount of Sugar and Mirin depending on the type of Miso you use. Darker colour Miso has stronger flavour.
Cook Tonkatsu (Pork Cutlets).
Make Misodare (Sweet Miso Sauce) by mixing all the ingredients.
Half fill a bowl with rice and cover it with some shredded cabbage and place the sliced Tonkatsu on top. Pour some Miso Sauce on the Tonkatsu.
