This is one of my childhood dishes. My mother used to cook this in a large pot for whole family of five. Ramen Noodles tend to get quite soft as they are cooked in the soup with other ingredients. She used particular Noodles that were made for this dish, but I use Japanese Instant Miso Ramen that are almost as good as fresh Ramen Noodles nowadays.

Ingredients

500ml x 2 Water *Note: Use the amount of Water according to the instruction. My Instant Ramen requires 500ml per pack, that’s why I added 500ml x 2.
2 Instant Miso Ramen *include Noodles and Soup & Seasoning Sachets
2-3 Cabbage Leaves
5cm Carrot *cut into thin strips
100 to 150g Thinly Sliced Pork
2 Spring Onion
*Note: Suggested additional ingredients are Shiitake, Shimeji, Beansprouts, Bok Choy, Garlic Chives, etc.
Shichimi (Japanese Chilli Spice Mix)

Method
  1. Cut all Vegetables and Pork into the size that is easy to eat.
  2. Place Water, Carrot and Cabbage in a large saucepan or pot, and bring to the boil.
  3. Once boiling, add Instant Ramen Noodles. When Noodles are half cooked, add Pork and Spring Onion, then add Soup and Seasoning. Cook until Pork is cooked and Noodles are soft.
  4. Sprinkle with Shichimi (Japanese Chilli Spice Mix) and enjoy immediately.
