Dishwasher’s drainpipe was chewed by mice and leaking for a long time unnoticed. That’s why I have been cooking in the bathroom using a portable induction hob. The kitchen floor is not yet repaired and I miss my oven so much. If I’ve had an access to my oven, I wouldn’t have cooked this dish, however, I have found that this frying-pan method is easier and quicker than oven-roasting.

Makes

4 Servings

Ingredients

1 head (*about 300g) Broccoli *cut into small florets, thick stem sliced
1 tablespoon Olive Oil
2 cloves Garlic *crushed
1/2 Chilli *sliced, OR Dry Chilli Flakes as required
2 pinches Salt
2 to 3 tablespoons Water
Black Pepper
Grated Parmesan

Method
  1. Heat Olive Oil in a frying pan over medium heat, add Broccoli, Garlic, Chilli, Salt and Water, cover with a lid and steam-cook for a few minutes.
  2. When the Water is evaporated, remove the lid and stir-fry until slightly browned.
  3. Sprinkle with some Black Pepper and grated Parmesan, and serve.
