On this website, I have shared a recipe for ‘Potato Oyaki’, a type of savoury pancake, and my ‘Potato Oyaki’ is made with Rice Flour. I know many people don’t stock Rice Flour. This ‘Potato & Smoked Salmon Pancakes’ can be made with any flour of your choice. And you don’t need to shred or grate Potatoes by hand. Using a food blender, the pancake batter can be made very quickly.

6 Pancakes

Ingredients

2 medium size Potatoes *about 300g, peeled and cut into small pieces OR finely grated
1 Egg
6 to 8 tablespoons Flour of your choice *I use Plain Flour.
1/2 teaspoon Baking Powder
1/4 teaspoon Salt *reduce the amount if Smoked Salmon is very salty
Black/White Pepper as required
2-3 Spring Onion *finely chopped
100g Smoked Salmon *cut into small pieces
1/4 cup Edamame *optional
Oil for cooking

Method
  1. Place Potato pieces and Egg in a blender. Blend until fairly smooth. *Note: You can finely grate the Potatoes instead of blending with Egg.
  2. Place Spring Onion in a large bowl, add the Potato mixture (OR grated Potatoes and Egg), Flour, Baking Powder, Salt & Pepper, and mix to combine. This should be quite thin batter. *Note: It is thin but not runny.
  3. Add Smoked Salmon and Edamame, and combine.
  4. Heat a small amount of Oil in a frying pan over medium heat, pour the mixture to make 10cm round, and cook both sides until golden brown. Add more oil if needed.
