This ‘Prawn & Egg Fried Rice’ is not a particularly special dish, but I like lettuce leaves in it. Many people do not cook lettuce. Why don’t you try cooking lettuce? The crispy lettuce adds a fantastic texture to the fried rice. Cos lettuce or Iceberg lettuce are recommended.

Prawns 100g
Oil 1/2 tablespoon
Salt & Pepper
Eggs 2 *lightly whisked
Oil 1 tablespoon
Cooked Rice 2 servings *about 360g, warmed
Spring Onion 2 *finely chopped
Salt 1/2 teaspoon
Soy Sauce 1 teaspoon
Lettuce 2 leaves *tear into small pieces

  1. Add small mount of Oil to the heated frying pan or wok over medium high heat, cook Prawns until cooked through. Season with Salt & Pepper and transfer to a plate.
  2. Add extra 1 tablespoon Oil, cook Eggs and warmed Cooked Rice, add Spring Onion and return the cooked Prawns, and stir-fry for a few minutes. Season with Salt and Soy Sauce, then add Lettuce. Mix well to combine.
