Cucumber_Salted


When Cucumbers are in season, they are quite sweet and the flavour is rich and refreshing. This simple ‘Salted Cucumber’ is great as the secondary dish in the traditional Japanese style meal with freshly cooked rice and miso soup.

Ingredients

1 large Continental Cucumber
1/2 teaspoon Salt
1 small piece Ginger *cut into fine strips
1 teaspoon Sesame Oil *optional

Method
  1. Cut Cucumber diagonally as you roll it on the board. This style of cut is called ‘Rangiri’ in Japanese.
  2. Sprinkle Salt and massage, then set aside for a while.
  3. Slice a small piece of fresh Ginger thinly, then slice again into fine strips. Add the sliced Ginger and Sesame Oil to the Cucumber and combine well.
