‘Spicy Pork Soboro Don’ is one of my family’s favourite dinner dishes. But I started adding Tofu (ALDI’s Organic Firm Tofu) to increase the quantity, so that we can have it for lunch next day. The additional Tofu makes the dish healthier, too.

6 to 8 Servings

Ingredients

500g Pork Mince
1 tablespoon Oil
1 small piece Ginger *finely grated
1 pinch Salt
2 cups Frozen Mixed Vegetables *OR 1 large Carrot, 1-2 cups Peas and Corn
*Note: You can add other vegetables and mushrooms.
2 tablespoons Sugar
2 tablespoons Mirin
5 tablespoons Soy sauce
1 tablespoon Toban Djan (Chili Bean Sauce)
400 to 500g Firm Tofu *crumbled or mashed
Freshly Cooked Rice

Method
  1. Heat Oil in a frying pan and cook Pork Mince and Ginger, add 1 pinch Salt to season.
  2. When Pork changed colour, add Vegetables, Sugar, Mirin, Soy Sauce and Toban Djan, and cook until vegetables are soft.
  3. Add crumbled Tofu and mix to combine, and cook until the sauce is almost gone.
  4. Half fill a bowl with freshly cooked rice and cover it with the meat mixture.
