In Japan, there is a tofu dish that is called ‘Hiyayakko’. It is basically chilled fresh tofu with various toppings of your choice. Popular toppings are grated ginger, ‘Katsuobushi’, shiso (perilla), finely chopped spring onion and soy sauce. This very healthy summer dish is a type of ‘Hiyayakko’. It is a good idea to serve individually on smaller plates.

Ingredients

Fresh Tofu 500g *Momen or Silk, softer type recommended
Tomatoes 2
Kimchi 1/4 to 1/3 cup
Spring Onions 2 *finely chopped
Shiso (perilla leaves) 6 to 8 leaves *finely sliced
Chilli Garlic Sauce 1 tablespoon
Soy Sauce 1 tablespoon

Method
  1. Cut Tomatoes and Kimchi into small pieces. Place all vegetables, Chilli Garlic Sauce and Soy Sauce in a bowl and mix to combine.
  2. Cut Tofu and place on a plate, spoon the tomato mixture on top and serve immediately.
