This is one of my Top 5 favourite salads. You don’t need any salad dressing for this salad. I only use some good quality Olive Oil, Salt and freshly ground Black Pepper. The sweetness and sourness from Canned Beetroots, and saltiness of delicious Fetta Cheese are good enough when combined with Baby Spinach. So easy! So simple! So good!

Ingredients

2 to 3 handfuls Baby Spinach
1 can (425g) Beetroots *cut into bite-size pieces
60g Fetta Cheese
Olive Oil
Salt
Freshly Ground Black Pepper

Method
  1. Ready to use Baby Spinach leaves are dry. Simply combine with some Olive Oil and season with Salt and freshly ground Black Pepper.
  2. Spread Baby Spinach on a serving plate, arrange Beetroots, and crumbled Fetta. Thats it! Enjoy!
