I used to make a pasta dish using these three ingredients, Spinach, Sweet Potato & Fetta. Many years ago, I had the pasta dish at a small cafe in Melbourne CBD. I fell in love with it, and I started making it. These days, I often leave out the pasta and make just the salad. It can be a great side dish.

Ingredients

1 Sweet Potato *Today it weighed 450g
1 bag (120g) Baby Spinach
1 to 2 tablespoons Olive Oil *extra virgin recommended
60g Fetta *crumbled
Salt & Black Pepper
2-3 tablespoons Pine Nuts *toasted

Method
  1. Peel Sweet Potato, cut into bite-size pieces, and steam or roast until cooked. Do not over cook as it gets mushy.
  2. Place Baby Spinach in a mixing bowl, add Olive Oil, Salt & Black Pepper, add cooked Sweet Potato pieces, and gently mix to combine. Baby Spinach would be half-cooked by the hot Sweet Potato, and the volume will be reduced.
  3. Add crumbled Fetta and toasted Pine Nuts. You can mix them, or just sprinkle them on top.
  4. *Note: You can simply mix this salad with freshly cooked Pasta. You may wish to add extra Olive Oil and Slat & Black Pepper.
