On the other day when I shared my ‘Takuan’ (Pickled Daikon) recipe, I received a request for ideas to use ‘Takuan’. ‘Takuan’ is pickled Daikon. You can use it just like other pickled Vegetables. ‘Takuan’ is seasoned with Salt, Sugar and Vinegar. It is a perfect ingredient for Salad. Because it is quite salty and sour, today I served with my Creamy Sesame Dressing.

Ingredients

4 servings Lettuce *crunchy Lettuce such as Cos Lettuce or Iceberg
3cm Takuan (Pickled Daikon) *thinly sliced
Additional Vegetables *Fresh Daikon, Cucumber, etc.

Creamy Sesame Dressing
*Note: You can use your favourite Salad Dressing of your choice
2 tablespoons Toasted Sesame Seeds
3 tablespoons Japanese Mayonnaise
1 teaspoon Sugar
2 teaspoons Soy Sauce
2 teaspoons Rice Vinegar

Method
  1. To make the ‘Creamy Sesame Dressing, grind Toasted Sesame Seeds, and mix with all other ingredients.
  2. Cut or tear Lettuce leaves into bite-size pieces, add thinly sliced Takuan (Pickled Daikon) and additional Vegetables. Drizzle over the dressing and serve.
