If you are tired of ordinary coleslaw and want something different, try this South Asian flavoured Cabbage Salad. I hesitate to call this dressing ‘Thai’, but it is definitely inspired by ‘Thai’ dressing. You may wish to add fresh Chilli, but I used Chilli Garlic Sauce as I usually don’t have fresh Chilli. I added just 1 tablespoon and this is hot enough for me.


Makes

4 to 6 Servings

Ingredients

1/6 Red Cabbage *about 300g, thinly sliced
1 Carrot *thinly sliced into strips
1/2 to 1 Red Capsicum *thinly sliced into strips
1/2 Red Onion *thinly sliced
1 handful Coriander *optional
1 handful Roasted Peanuts *coarsely chopped

Dressing
3 tablespoons Lime OR Lemon Juice
2 tablespoons Brown Sugar *firmly packed
1 tablespoon Chilli Garlic Sauce *OR finely chopped fresh Garlic & Chilli as required
1 tablespoon Fish Sauce
*Note: If you use fresh Garlic and Chilli, you might need extra Fish Sauce.

Method
  1. Place the thinly sliced Red Cabbage, Carrot, Red Capsicum and Red Onion in a mixing bowl. Combine all the Dressing ingredients in a small bowl, add to the Vegetables, and mix well.
  2. Add Coriander leaves (only if you like it) and Roasted Peanuts. You can mix them OR just sprinkle them on top.
