‘Doria’ dish is my first choice to cook when I have leftover cooked rice. Using a canned Tuna and a bag of Baby Spinach, which is ready to use, this comforting and delicious ‘Doria’ is easy to prepare. Tuna and Spinach are a good combination indeed.

Ingredients

4 servings Cooked Rice *warmed
30g Butter *plus extra for greasing the baking dish
1 Onion *thinly sliced
1 clove Garlic *finely chopped
185g Canned Tuna *You may wish to add more
Salt & Pepper
120g Baby Spinach
1 cup grated Tasty Cheese (Cheddar)

White Sauce
40g Butter
1/4 cup Plain Flour
2 cups Milk
Salt & Pepper

Method
  1. Preheat oven to 200℃.
  2. Heat Butter in a frying pan, cook Onion and Garlic. When Onion is soft, add drained Tuna, and season with Salt & Pepper. Add Baby Spinach. It would be a little tricky to cook, but the volume of Baby Spinach will instantly reduce.
  3. Place cooked Rice in a large heat-proof mixing bowl, warm in the microwave. Add the Spinach and Tuna mixture, and mix to combine. Add extra Salt & Pepper if required.
  4. To make white sauce, heat Butter in a saucepan over medium heat until melted and foaming, add Flour and cook stirring until mixture bubbles. Slowly add Milk, stirring constantly until sauce boils and thickens. Season with Salt & Pepper.
  5. Lightly butter a large ovenproof dish, place the Rice mixture and pour the White Sauce over the Rice. Cover with grated cheese, and bake for 20 minutes or until golden.
