When I was a child, nobody had the oven. Cakes were often steamed and Cookies were cooked on iron plate. I tried to cook my favourite Shortbread dough on my thick-base frying pan. It was quite easy to do.

12 Cookies

Ingredients

60g Butter *cut into small cubes and softened
2 tablespoons Caster Sugar
3/4 cup Plain Flour
*Note: You can add 1-2 tablespoons Black Currants

Method
  1. Mix softened Butter and Sugar until smooth, add Plain Flour, and mix well. Add Black Currants (*optional) and use your hands to bring the dough together.
  2. Roll the dough into 12 balls. Flatten each ball into 8mm thick disc.
  3. Heat a frying pan, thick-base pan preferred, over medium heat, then reduce to low heat. Once the temperature of the pan dropped, cook cookies for 6 to 7 minutes on each side. Transfer to a wire rack to cool completely.
