When I was a child, nobody had the oven. Cakes were often steamed and Cookies were cooked on iron plate. I tried to cook my favourite Shortbread dough on my thick frying pan. It was quite easy to do.
60g Butter *cut into small cubes and softened
2 tablespoons Caster Sugar
3/4 cup Plain Flour
2 to 3 tablespoons Black Currants *optional
- Mix softened Butter and Sugar until smooth and well combined. Add Plain Flour and mix well. Add Black Currants (*optional) and use your hands to bring the dough together.
- Roll the dough into 12 balls. Flatten each ball into 8mm thick disc.
- Heat a frying pan over medium heat, then reduce to low heat. Cook cookies for 6 to 7 minutes on each side. Transfer to a wire rack to cool completely.
