Today is March 12, it’s Auntie Joan’s birthday, and that reminded me her Orange Marmalade was getting old. Auntie Joan gives us a jar of her homemade Marmalade every year, but we don’t eat Marmalade. So, I use it to make cakes such as ‘Orange Marmalade & Whisky Pound Cake’. Today I made these Cookies instead, using my basic cookie recipe replacing Egg with Joan’s Orange Marmalade. I also replaced some Flour with Rolled Oats. This is how I made them.

24 Cookies

Ingredients

125g Butter *softened
1/2 cup Brown Sugar *OR 1/3 cup for less sweet cookies
100g Orange Marmalade
1 cup Self-Rising Flour
1 & 1/2 cups Rolled Oats

Method
  1. Preheat oven to 180℃. Line 2 baking trays with baking paper.
  2. Mix softened Butter and Brown Sugar until smooth. Add Orange Marmalade and mix well. Add Self-Rising Flour, mix well, then add Rolled Oats, and combine evenly.
  3. Roll the dough into 24 balls, about 3cm size, press down slightly, and place on the prepared trays, 12 balls each.
  4. Bake for about 15 minutes or until golden and cooked. Transfer to a wire rack and cool.
