This cake is a variation of my ‘Whatever Fruit You Have’ Cake. My son bought a large bag of pitter dried Prunes, and they had been sitting in the fridge for a long time. I decided to use them up today. It was a great decision to use Brown Sugar and add Spices to this cake. I am not a big fan of soft and chewy dried Prunes, but I truely enjoyed this cake.


Cake Tins

18cm x 27cm Cake Tin *Use a similar size Tin

Ingredients

200 to 250g pitted Prunes
125g Butter *softened
1/2 cup Brown Sugar *OR Caster Sugar
1/4 teaspoon Salt
2 large Eggs
1 teaspoon Vanilla Extract
1 & 1/2 cups Self-Raising Flour
1 teaspoon Ground Cinnamon
1 teaspoon Allspice *OR other spice of your choice, e.g. Clove, Nutmeg, etc.
1/2 cup Milk

Optional Maple Syrup Icing
1/4 cup (30g) Icing Sugar
1 tablespoon (15ml) Maple Syrup
A few drops Water *as required

Method
  1. Preheat oven to 170℃. Line a cake tin with baking paper.
  2. Cut each pitted Prune into 4 to 6 pieces.
  3. Mix softened Butter, Brown Sugar and Salt in a mixing bowl until creamy. Add Eggs one at a time, mixing well. Add Vanilla Extract and mix well.
  4. Add Self-Raising Flour, Cinnamon, Allspice (OR other Spices) and Milk, and mix to combine. Then add chopped Prunes and combine evenly.
  5. Spoon the mixture into the prepared tin and spread evenly.
  6. Bake for 30 to 35 minutes OR until cooked through. Cool in the tin for 10 minutes, then carefully transfer to a wire rack and cool completely.
  7. Apply your favourite Icing when the cake is cool. To make Maple Syrup Icing, mix Icing Sugar and Maple Syrup. If too thick, add a small amount of Water. Drizzle the Icing over the cooled cake.
