The other day, I tasted a store-bought Crepe, and it was absolutely awful. Crepes are basically very thin pancakes, and it is easy to make. You don’t need a specific crepe pan, use a frying pan. The awful store-bought Crepe inspired me to make this treat today. I wrapped Banana and Whipped Cream with them.


Makes

4 Pieces (4 x 20cm Crepes)

Ingredients

Sweet Crepes
1/2 cup Plain Flour
1 tablespoon Caster Sugar
1 pinch Salt
1/2 cup Milk *plus extra if required
1 large Egg
1/4 teaspoon Vanilla Extract
1 tablespoon (15g) melted Butter
Oil for cooking
Powdered Sugar for dusting *optional

Filling
2 Bananas
1/4 cup Thickened Cream
1 teaspoon Caster Sugar
Jam, Lemon Curd, Nutella, Chocolate Spread, etc. *optional

Method
  1. Combine Flour, Sugar and Salt in a mixing bowl. Add Milk, Eggs and Vanilla, and beet with a whisk until smooth. Add melted Butter and mix well. Cover with a plate OR plastic food wrap, and allow to rest for 1 hour.
  2. *Note: This batter should be thin as you would spread it in a frying pan. If the batter is too thick, add extra 1 to 2 tablespoons Milk, and mix well. If you are not sure, you will know when you cook the first crepe.
  3. Heat a frying pan over medium heat and lightly oil it. Pour the batter onto the frying pan, tip and rotate the pan to spread batter to form a thin crepe. Cook both sides until lightly browned.
  4. Transfer to a plate and repeat the process with remaining batter. Cool the crepes completely.
  5. While the Crepes are cooling, whip Cream and Sugar firmly. Peel Bananas and cut in half. If large, trim into the right size to wrap with crepes.
  6. Place a cooled Crepe on a flat surface, place a heaped tablespoonful of whipped Cream in centre, add a teaspoon of sweet ingredient such as Jam if you want to do so, place Banana, and wrap as you like.
  7. Dust with Icing Sugar and enjoy.
