This soft and fluffy ‘Milk Tea Mousse Jelly’ is very easy to make, yet it can be a fancy dessert for your dinner party. You need to make STRONG Tea first. I used a tea bag of Ceylon Extra Strength Black Tea, but you can use your favourite Tea leaves. Chai is also suitable.

Ingredients

2 teaspoons Gelatine Powder *about 8g
2 tablespoons Water
150ml Strong Tea of your choice
3 tablespoons Caster Sugar
1/2 cup Thickened Cream
2 large Egg Whites *whipped
2 tablespoons Caster Sugar to add Egg Whites
Whipped Cream for decoration *optional

Method
  1. Sprinkle Gelatine Powder into Water in a small bowl and soak for 5-10 minutes.
  2. Make strong Tea. Place 150ml of the Tea into a small sauce pan. Add soaked Gelatine, and heat up, mixing well, and remove from heat when Gelatine dissolved completely.
  3. Add Sugar and mix well, then add Cream, and stir until combined well. Leave in the fridge until the jelly mixture has started thickening. *Note: You can dip the bottom of the saucepan in icy cold water to cool it quickly.
  4. While the jelly mixture is cooling, whip Egg Whites firmly, add Caster Sugar, and whip well until Sugar dissolved completely. Gradually fold it into the slightly thickened jelly mixture.
  5. Pour the mixture into 4 serving glasses and leave them in the fridge until set. *Note: I decorated it with slightly sweetened whipped Cream.
