
This soft and fluffy ‘Milk Tea Mousse Jelly’ is very easy to make, yet it can be a fancy dessert for your dinner party. You need to make STRONG Tea first. I used a tea bag of Ceylon Extra Strength Black Tea, but you can use your favourite Tea leaves. Chai is also suitable.

Ingredients
2 teaspoons Gelatine Powder *about 8g
2 tablespoons Water
150ml Strong Tea of your choice
3 tablespoons Caster Sugar
1/2 cup Thickened Cream
2 large Egg Whites *whipped
2 tablespoons Caster Sugar to add Egg Whites
Whipped Cream for decoration *optional
Method
- Sprinkle Gelatine Powder into Water in a small bowl and soak for 5-10 minutes.
- Make strong Tea. Place 150ml of the Tea into a small sauce pan. Add soaked Gelatine, and heat up, mixing well, and remove from heat when Gelatine dissolved completely.
- Add Sugar and mix well, then add Cream, and stir until combined well. Leave in the fridge until the jelly mixture has started thickening. *Note: You can dip the bottom of the saucepan in icy cold water to cool it quickly.
- While the jelly mixture is cooling, whip Egg Whites firmly, add Caster Sugar, and whip well until Sugar dissolved completely. Gradually fold it into the slightly thickened jelly mixture.
- Pour the mixture into 4 serving glasses and leave them in the fridge until set. *Note: I decorated it with slightly sweetened whipped Cream.
