
Well… it looks messy, doesn’t it? But it is delicious! Mackerel is my favourite fish and I stock Canned Mackerel. ALDI’s Canned Mackerel in Brine is inexpensive and good quality. Using 1 can and already cooked Udon Noodles, this dish is quick and easy to make. Today I added Shiso from my back yard, and it was absolutely delicious with the Mackerel and this Miso Sauce.

Ingredients
1 serving Cooked Udon
1/2 tablespoon Dried Cut Wakame *optional
2 to 3cm Cucumber *thinly sliced
1 can (125g) Mackerel in Brine *drained and torn into bite-size pieces
Finely chopped Spring Onion
1 to 2 leaves Shiso *finely sliced
Miso Sauce
50ml Water
1/4 teaspoon Dashi Powder *Katsuo (Bonito) Dashi recommended
1/2 tablespoon Toasted Sesame Seeds *ground
1/2 tablespoon Miso *I used White Miso
1/2 tablespoon Soy Sauce
1/2 tablespoon Mirin *OR 1/2 teaspoon Sugar
Method
- Combine all the Miso Sauce ingredients in a small bowl.
- Heat Cooked Udon in boiling water until soft, add Dried Cut Wakame is you add it, and cook a few more minutes. Drain, cool under cold water, then drain well.
- Place the drained Udon and Wakame in a serving bowl. Arrange Cucumber and Mackerel on top, add Spring Onion and Shiso, then pour the Sauce over and enjoy.
