
I wanted to make Apple Upside-down Cake using a frying pan. I have tried several recipes and methods that I had found on the internet, and all failed. Apple didn’t get soft, OR the batter took too long to get cooked and the Apple was burnt, OR something went wrong always. To cook it on my gas cook top, the frying pan needs to be small. Apple need to be pre-cooked, but I want to do things easiest possible way. Now, I can share my own recipe and method with you.
Makes
2 Servings *This recipe is for 20cm non-stick frying pan
Ingredients
1 Apple *I use Royal Gala OR Pink Lady
*Note: Cooking Apples that get soft quickly are not suitable.
1 tablespoon Water
15g (1 tablespoon) Butter *torn into small pieces
1 tablespoon Sugar
Icing Sugar for dusting *optional
Batter
1 Egg
1/4 cup Milk
2 tablespoons Sugar
1 pinch Salt
A few drops Vanilla Extract
1/2 cup Self-Raising Flour
Method
- Combine all the Batter ingredients in a mixing bowl. *Note: It is a good idea to warm the batter slightly in a microwave, but DO NOT cook it.
- Wash Apple, remove the core, and cut into quarters, then cut each quarter into 3 wedges. Arrange them in a non-stick 20cm frying pan in a single layer. Add Water, sprinkle with Sugar, scatter Butter.

- Cover with a lid, and cook over medium low heat until water is evaporated and you see thick syrupy liquid bubbling.

- Remove the lid and dry it with tea towel, pour the Batter over the Apple evenly, cover with the lid, and cook at LOW heat for 10 minutes OR until cooked through, but be aware the Apple pieces getting burnt.

- *Note: If Batter is not yet cooked, carefully slide the cake onto a plate, and flip it back into the frying pan, and cook the other side until cooked though. If you keep cooking the Apple side for too long, the Apple pieces might get burnt.

- Dust with Icing Sugar and enjoy.
