There are some different methods to cook Sweet Potato Pancakes. Some people pre-cook Sweet Potato and use mashed Sweet Potato to make pancakes. I grate fresh Sweet Potato, then mix with other ingredients. This is the easiest method, and the pancakes are soft and fluffy.

8 x 10cm Pancakes

Ingredients

1 medium size Sweet Potato *300 to 350g
2 Eggs
1/4 cup Brown Sugar *OR White Sugar
1/4 teaspoon Salt
1 teaspoon Ground Cinnamon
1 teaspoon Ground Ginger
*Note: You can add some Allspice, Nutmeg OR Clove as well.
1/4 cup Milk
2 tablespoons Oil OR melted Butter *I used Sunflower Oil
1 cup Self-Raising Flour
Oil for cooking

Method
  1. Peel Sweet Potato and coarsely grate it.

    This is the grater that I use.
  2. Combine all ingredients and mix well. *Note: You can add Sultana Raisins as well.
  3. Heat a small amount of Oil in a frying pan, non-stick preferred, over medium low heat, form pancakes, cover with a lid, and cook for 2 minutes OR until nicely browned. Then flip over, cover with a lid, and cook the other side for 2 minutes OR until cooked through.
  4. Enjoy with Whipped Cream, Sour Cream, Maple Syrup, Golden Syrup, Honey, etc.
