I have come across an interesting YouTube video. British high school boys were tasting American Thanksgiving dishes, and one of them was a dessert called ‘Sweet Potato Casserole with Marshmallows.’ Many boys said it was extremely sweet. I had never known such a dessert and I was very curious, so I studied the recipes I could find on the internet. This is my take, not extremely sweet, and this recipe is for 2 servings as I don’t want to cook a large baking dishful of it. It is actually delicious. Why don’t you try?

2 Servings (2 Ramekins)
Ingredients
1 medium Sweet Potato *about 300g
1/2 to 1 tablespoon Brown Sugar
1 tablespoon (15g) Butter
1 tablespoon Orange Juice *IMPORTANT!
1 pinch Ground Cinnamon
A few drops Vanilla Extract
Marshmallows to cover *cut into small pieces if large
Method
- Peel Sweet Potato, cut into small pieces, cook in slightly salted water in a saucepan for 5 minutes OR until soft, then drain.
- Use a fork to mash coarsely OR smoothly. Add Brown Sugar and Butter, mix to combine, then add Orange Juice, Cinnamon and Vanilla, and mix well.
- Half fill 2 ramekins with the Sweet Potato mixture, cover with Marshmallows, and bake in 180℃ oven until Marshmallows are nicely browned. By then, Marshmallows are soft and gooey.
