I had a small amount of leftover Mashed Sweet Potato, that was not enough to make anything with. So, I mixed it with some Pan-Stewed Apple and enjoyed it with Yoghurt and Honey. This was inspired by a Japanese dish called ‘Kinton’, which is a very sweet dish of Mashed Japanese Sweet Potato. Chestnuts are often mixed with it, but Apple is also popularly used. I didn’t add lots of Sugar as Honey adds lovely sweetness.

Ingredients
1/4 to 1/3 cupful Mashed Sweet Potato
1 teaspoon Sugar *optional, alter the amount
1 small pinch Salt
1 teaspoon Butter
Pan-Stewed Apple with Sultanas
Unsweetened Yoghurt to serve *I used Greek Yoghurt
Honey to serve
Roasted Almonds *optional
Method
- Place mashed Cooked Sweet Potato, Sugar, Salt and Butter in a bowl, heat in the microwave until Butter melts, and mix to combine.
- Add some pieces of Pan-Stewed Apple and Sultanas, and combine.
- Top with 1 heaped tablespoon (OR more) Unsweetened Yoghurt, add some Roasted Almonds, drizzle with Honey, and enjoy.
