This is an absolutely simple soup that I cook very often. It is very comforting and filling. Today I added 100g Iceberg Lettuce, and you might think it is too much when you see it, but it is not. Actually you can add more if you like. This soup is low in calories, but not very nutritious. You can add a protein such as Egg, Chicken, Prawns, Pork, etc.

Ingredients

300ml Chicken Stock *OR 300ml Water & 1 teaspoon Asian Chicken Bouillon Powder
1 tablespoon Sake (Rice Wine)
1/4 teaspoon grated Ginger
A few drops Sesame Oil
1 teaspoon Soy Sauce
Salt & White Pepper
100g (2 leaves) Iceberg Lettuce *torn into bite-size pieces
40g Dry ‘Harusame’ Noodles (Bean Thread Noodles)
Toasted Sesame Seeds *optional
Finely chopped Spring Onion *optional

Method
  1. Heat Chicken Stock, Sake (Rice Wine), Ginger and Sesame Oil in a saucepan, and season with Soy Sauce, Salt and White Pepper.
  2. Add Iceberg Lettuce and bring back to the boil, then add Dry ‘Harusame’ Noodles, and cook until ‘Harusame’ Noodles are soft. Sprinkle with some Toasted Sesame Seeds and Spring Onion, and enjoy.
