Finely Ground Roasted Soy Beans is called ‘Kanako’ (きなこ) in Japanese, and it is a very popular ingredient for Japanese sweets. Kinako is 100% Soy Beans and nutritious. It goes well with Cocoa flavour. These cookies have a lovely taste of Kinako and Cocoa combined, and can be enjoyed with Coffee, Milk Tea, Green Tea, and even Matcha.

Ingredients

125g Butter *softened
1/2 cup Brown Sugar
1/8 teaspoon Salt
1 Egg
1 & 1/2 cups Plain Flour
1/4 cup Kinako (Finely Ground Roasted Soy Beans)
1/4 cup Cocoa

Method
  1. Mix softened Butter, Sugar and Salt until smooth. Add Egg and mix well until creamy.
  2. Add Plain Flour, Kinako and Cocoa, and mix and bring the ingredients together into dough.
  3. Place the dough on a sheet of plastic warp, shape into a log, and wrap it. Refrigerate until firm. *Note: It might be easier to make 2 logs.
  4. When it is firm, preheat oven to 170ºC. Line a baking tray with baking paper. Remove and discard the plastic wrap on the dough, slice into 8-10mm thick rounds.
  5. Place on the prepared tray and bake for 20 minutes, then cool on a wire rack.
