
Yesterday my daughter gave me a loaf of Raisin Bread, which was already quite stale. It is actually perfect for ‘Bread Pudding’, but I am too tired to make it. And as always, once I started thinking about ‘Bread Pudding’, the craving kicked in and I couldn’t stop it. The easiest solution is always Mug Pudding. If you have a microwave, it takes less than 10 minutes to make it, including 5 minute waiting time.
Makes
1 Serving *I used 380ml mug
Ingredients
1 slice (about 50g) Raisin Bread
Butter
1 Egg
2 to 3 teaspoons Caster Sugar
A few drops Vanilla Extract *optional
1/2 cup Milk
Ice Cream OR Thickened Cream to serve
Method
- Crack an Egg into a mug, add Sugar and Vanilla (*optional), and whisk well. Add Milk and mix well.
- Butter the Raisin Bread slice, cut into bite-size pieces, and add to the mug. Allow to rest for 5 minutes.
- Place the mug on a small plate just in case it boils over, place in the microwave, cook at 500W power for 1 minutes. This process warms the mixture. Push the Raisin Bread pieces down into the mixture, then cook again for 1 minutes, and again for 30 seconds OR until cooked though.
- Allow to rest for 1 minute. Enjoy with Ice Cream OR Thickened Cream.
