
‘Bread & Butter Pudding’ is one of my husband’s favourite winter desserts. It is not hard to make, but some fiddly work is required such as buttering the bread slices. I even spread Apricot Jam, then cut the slices, arrange them in a baking dish, etc. This recipe is much easier. Bread can be Hot Dog Rolls, Cob Loaf, Hamburger Buns, OR any soft bread.

4 to 6 Servings
Ingredients
About 300g Soft Bread *Brioche, White Bread Rolls, Hamburger Buns, etc.
*Note: A few days old, dry and stale Bread is perfect.
1/2 cup Sultanas
Butter for greasing
1 tablespoon Sugar (White OR Brown) for topping *OR you can dust with Icing Sugar after Pudding is baked
Egg & Milk Mixture
2 cups (500ml) Milk
50g Butter *cut into small cubes, can be omitted, read ‘Method 1’
1 cup Thickened Cream *OR Milk
1/4 cup Caster Sugar
4 Eggs
1 teaspoon Ground Cinnamon
1 teaspoon Vanilla Extract
Method
- Preheat oven to 180℃. Lightly grease a large baking dish with Butter.
- Place Butter and Milk in a large mixing bowl, heat in the microwave until warm and Butter melts. Add other ingredients and whisk well until smooth. *Note: Butter can be omitted OR reduced if you use buttery bread such as Brioche.
- Cut Bread into cubes about 3cm in size and add to the bowl. Add Sultanas and gently mix to combine.
- Pour the mixture into the prepared baking dish. Sprinkle with Sugar on top. *Note: I forgot to add Butter to the mixture, so I drizzled the melted Butter on top. This method seems to be good.
- Bake for 30 to 40 minutes until cooked though. You may wish to dust the top with Icing Sugar. Enjoy this pudding hot, with Cream OR Vanilla Ice Cream.

A bit of history on bread and butter pudding, which you may have already known: it was made by poor people in order to make use of stale bread.

Lewis, thank you for your comment. My family was poor but my sisters and I never missed a meal thanks to my mother. She never ever wasted anything. She taught us not to waste even a grain of rice. Your comment made me think about my mother.
