Jumbo mushrooms called King Oyster Mushrooms, ‘Eryngii’ in Japan, are available from many grocery stores. I am so glad we can now enjoy a wide variety of mushrooms in Australia. My family love mushrooms and I cook them a lot. This dish is so easy and cheap to cook, yet so delicious!


4 Servings


3 to 4 Potatoes
3 to 4 King Oyster Mushrooms
1 clove Garlic *finely chopped
4 to 5 fillets Anchovies in Olive Oil *finely chopped
2 tablespoons Olive Oil
2 Spring Onions *finely chopped
Soy Sauce

  1. Wash and peel Potatoes, then cut into small wedges. Cook in the microwave until just soft. I cook them using my microwave on full power for 6 to 7 minutes, tossing and turning a couple of times.
  2. Slice King Oyster Mushrooms, chop up Garlic, Anchovies and Spring Onions.
  3. Heat Olive Oil in a frying pan, add Garlic, softened Potatoes and sliced King Oyster Mushrooms, and cook until potatoes are browned and mushrooms are soft.
  4. Sprinkle chopped Spring Onions and some Soy Sauce before serve.
