Jumbo mushrooms called King Oyster Mushrooms, ‘Eryngii’ in Japan, are available from many grocery stores. I am so glad we can now enjoy a wide variety of mushrooms in Australia. My family love mushrooms and I cook them a lot. This dish is so easy and cheap to cook, yet so delicious!

Ingredients
3 to 4 Potatoes
3 to 4 King Oyster Mushrooms
1 clove Garlic *finely chopped
4 to 5 fillets Anchovies in Olive Oil *finely chopped
2 tablespoons Olive Oil
2 Spring Onions *finely chopped
Soy Sauce
Method
- Wash and peel Potatoes, then cut into small wedges. Cook in the microwave until just soft. I cook them using my microwave on full power for 6 to 7 minutes, tossing and turning a couple of times.
- Slice King Oyster Mushrooms, chop up Garlic, Anchovies and Spring Onions.
- Heat Olive Oil in a frying pan, add Garlic, softened Potatoes and sliced King Oyster Mushrooms, and cook until potatoes are browned and mushrooms are soft.
- Sprinkle chopped Spring Onions and some Soy Sauce before serve.
