‘Curry Flavoured Smoked Sausage & Potato Salad’ is one of my family’s favourite potato salads and I sometimes crave it. Today I wanted to cook it, but I didn’t have Sausages. As I had some Canned Fish, I decided to use Canned Mackerel instead of Sausages, and the result was great. It was delicious! The salad didn’t have fishy smell thanks to the Curry Powder. And this salad was a good filling for sandwich, too.

Ingredients

2 Potatoes *200 to 250g
1 can (125g) Mackerel in Brine *drained

Salt & White Pepper
1/4 cup Edamame Beans *OR Cucumber that is cut into small pieces
1 Spring Onion *finely chopped
4 tablespoons (1/4 cup) Japanese Mayonnaise
1/2 tablespoon Curry Powder

Method
  1. Peel Potatoes, cut into bite-size pieces, and cook in salted water until soft. Drain well, place in a mixing bowl, and season with Salt & White Pepper.
  2. Drain the canned Mackerel and break into bite-size pieces. Add the Mackerel, Edamame Beans (OR Cucumber), finely chopped Spring Onion, Japanese Mayonnaise and Curry Powder to the Potato, and mix to combine.
