
Many traditional Japanese dishes are seasoned with Sugar, Mirin and Soy Sauce. And that is the flavour I love the most and I often crave it. Today I cooked Fried Tofu Puffs in this flavour. Fried Tofu Puffs are available from many Asian grocery stores. These ‘Simmered Tofu Puffs’ are delicious to eat with Rice, but can be a great topping for Udon Soup OR Chirashi-zushi.

Ingredients
150g Fried Tofu Puffs *bite-size type
1 cup Dashi Stock *OR 1 cup Water & 1/2 teaspoon Dashi Powder
2 tablespoons Sugar
2 tablespoons Mirin
2 tablespoons Soy Sauce
Method
- If Fried Tofu Puffs have unpleasant smell of oil, boil them in water for a few minutes, then drain to remove unwanted oil. *Note: This process is optional.
- Place Dashi Stock, Sugar, Mirin and Soy Sauce in a large saucepan, arrange Tofu Puffs in the saucepan evenly, and bring to the boil. Then reduce the heat and simmer for a few minutes. Set aside for a while and allow Tofu Puffs suck up the soup.
- *Note: If the flavour is too strong for you, add extra Water.
