‘Crispy Tofu Balls’ that I use for cooking frequently are made with Tofu, Surimi (Fish Paste) and some Vegetables. They are similar to fried Fishballs, so you can use Fishballs instead. Chicken OR Pork meatballs and Fishcakes would be good, too. Softly cooked Wombok and Harusame Noodles are very comforting. Makes 1 Serving Ingredients 300ml …
Today I realised that I had a lot of Spring Onions, a bunch I had bought and another bunch my daughter had bought, and some of them were VERY thick. As I had leftover ‘Abura-age’ (Fried Thin Tofu) to use up, I just stir-fried the VERY thick Spring Onions and ‘Abura-age’. It was a quick …
The other day, I stir-fried Wombok and Shimeji. As I expected, a lot of water came out from Wombok. I planned to thicken the liquid with Potato Starch, but I added ‘Abura-age’ (Thin Fried Tofu) instead. ‘Abura-age’ instantly sucked up all the yummy liquid, and it turned delicious. This is how I cooked it. If …
I first bought Crispy Tofu Balls as I expected they were same as a Japanese food called ‘Ganmodoki’ (Deep-fried Tofu Patties). Unfortunately what I bought were similar to Fried Fishballs but I loved them. Today I cooked the Crispy Tofu Balls just like I cook ‘Ganmodoki’. From now on, I will stock the Crispy Tofu …
‘Spicy Pork & Tofu Soboro Don’ is very popular among my family members, and I cook it very often. Today I tried to cook a Vegan version of it. I usually use Toban Djan (Chilli Bean Sauce) for the spiciness, but I used Gochujang (Korean Spicy Miso) today as it adds sweetness and Umami as …
Bamboo Shoots are in season in March in the region where I grew up, but not in Melbourne. First of all, I have never seen fresh Bamboo Shoots where I live now. Fortunately, already boiled Bamboo Shoots are available from Japanese grocery stores. Today I cooked them with Tofu Puffs. This dish brought back memories …
This is an absolutely simple stir-fry. Today I used Pork and Fried Tofu, but you can use Pork only, Fried Tofu only, OR Chicken if you prefer. The key element of this dish is the Sauce made with Gochujang (Korean Spicy Miso). This dish is delicious with freshly cooked Rice, but you can enjoy it …
This is a quick & easy dish, that can be enjoyed as a soup, OR you can pour it over freshly cooked Rice or Noodles. It is low in calories and healthy. I don’t use Oil at all, but a few drops of Sesame Oil could add a flavour. Please use soft type Tofu such …
‘Wakame & Cucumber Salad’ is one of the most popular Japanese salads called ‘Ae-mono’. Any cooked seafood such as Prawns, Squid and Scallops, OR Chikuwa (Tubular Fishcake) can be a great addition to it. My mother often adds ‘Shirasuboshi’ (しらす干し), dried whitebait. Today I added ‘Abura-age’ (Thin Fried Tofu) for a vegan version. These ‘Abura-age’ …
When I was a child, I tended to think this kind of food was for old people. Now I am old, and I love this kind of food. It is so comforting, and delicious to eat with freshly cooked Rice. I use a whole packet of Dried Shiitake and a whole packet of Tofu Puffs. …
‘Takikomigohan’, a Japanese dish of Rice that is cooked with other ingredients and seasonings, is my favourite thing to eat. It can be made with very simple ingredients. Today I used ‘Abura-age’ (Fried Thin Tofu), that can be substituted with Tofu Puffs, and a lot of Cabbage. And the Cabbage created the sweetness in the …
Kōya Dōfu, Japanese freeze-dried Tofu, looks like a very dried sponge. You need to rehydrate before cooking. The most popular cooking method is simmering in seasoned Dashi Stock. However, you can cook it as you like. Today I pan-fried it. The texture of Kōya Dōfu is so unique. It is similar to meat. Makes 2 …
