
Spicy rich miso flavoured pork mixture on top of freshly cooked udon. ‘Jaa Jaa’ comes from a Chinese word ‘Zha Jiang’ which means ‘Fried Sauce’. It is normally made by simmering stir-fried ground Pork OR Beef with fermented soybean paste. I use my Japanese style Sweet Miso Sauce. Pork Mince can be replaced by Beef Mince OR Chicken Mince. This is yummy!

Ingredients
4 servings Udon Noodles
2 leaves Lettuce
1/2 Cucumber
1 Spring Onion
500g Pork Mince
4 Shiitake *finely chopped
4 Spring Onion *finely chopped
1/2 tablespoon Sesame Oil OR 1 tablespoon Vegetable Oil
1 small piece Ginger *grated
Sweet Miso Sauce
4 tablespoons Miso *dark colour Miso is recommended
1 tablespoon Soy Sauce
1 tablespoon Sugar
2 tablespoons Mirin
4 tablespoons Water
2-3 teaspoons Toban Djan (Chili Bean Sauce)
Method
- Combine all the sauce ingredients in a small bowl.
- Slice Lettuce, Cucumber and Spring Onion into fine strips and put them aside. They will be used as toppings.
- Heat Oil in a frying pan and cook Pork Mince and Ginger. When Pork changed colour, add Shiitake and Spring Onions, then add the sauce. Cook until the sauce is thickened.
- Cook Udon as instructed, and drain well. Place Udon in a bowl, cover with the pork mixture, place some Lettuce, Cucumber and Spring Onion on top, and serve.
