Spicy rich miso flavoured pork mixture on top of freshly cooked udon. ‘Jaa Jaa’ comes from a Chinese word ‘Zha Jiang’ which means ‘Fried Sauce’. It is normally made by simmering stir-fried ground Pork or Beef with fermented soybean paste. My ‘Jaa Jaa Sauce’ is based on my Sweet Miso Sauce. You can use Tianmian Jiang (Sweet Bean Sauce) if you have it. Pork Mince can be replaced by Beef Mince or Chicken Mince. This is yummy!

Ingredients

Udon Noodles 4 servings
Lettuce 2 leaves
Cucumber 1/2 to 1
Spring Onion 1
Pork Mince 500g
Shiitake 4 *finely chopped
Spring Onion 4 *finely chopped
Sesame Oil 1/2 tablespoon OR Vegetable Oil 1 tablespoon
Ginger 1 small piece *grated

Sauce Ingredients

Miso 4 tablespoons *dark colour Miso is recommended
Soy Sauce 1 tablespoon
Sugar 1 tablespoons
Mirin 2 tablespoons
Water 4 tablespoons
Toban Djan (Chili Bean Sauce) 2-3 teaspoons

Method
  1. Combine all the sauce ingredients in a small bowl.
  2. Slice Lettuce, Cucumber and Spring Onion into thin strips and put them aside. They will be used as toppings.
  3. Heat Oil in a frying pan and cook Pork Mince and Ginger. When Pork changed colour, add Shiitake and Spring Onions, then add the sauce. Cook until the sauce is thickened.
  4. Cook Udon as instructed, and drain well. Place Udon in a bowl, cover with the pork mixture, place some Lettuce, Cucumber and Spring Onion on top and serve.
