‘Creme Caramel’ is not the easiest dessert to make. BUT, if for 1 serving, ‘Microwave Creme Caramel’ can be made quickly and easily. Today I replaced a half of Milk with Mascarpone, because I wanted to use up a small amount of leftover Mascarpone. I believe you can use Sour Cream OR Double Cream instead. The texture of this Creme Caramel is firmer as you can guess. It didn’t look perfect as some parts were over-cooked I am afraid, but it tasted so good.

Ingredients

Caramel
1 tablespoon Caster Sugar
1 teaspoon Water

Custard
1 Egg
1 & 1/2 tablespoons Caster Sugar
1/4 cup Full Cream Milk
1/4 cup Mascarpone
A few drops Vanilla Extract

Method
  1. Place Sugar and Water in a ramekin or mug. Cook in the microwave at 600W power for 2 minutes (OR 1 minute at 1100W). Then carefully cook further until it turns brown. Set aside and cool. The caramel will harden.
  2. While the caramel is cooling, mix Egg, Caster Sugar, Milk, Mascarpone and a few drops Vanilla in a measuring jug or small bowl until well combined and smooth. Pour the mixture over the caramel, that is probably still warm.
  3. Cook in the microwave at 500W to 600W for 2 minutes. Then carefully cook further until softly set. Allow to cool, then chill in the fridge. Turn out onto a deep plate and enjoy.
