
My daughter gave me a large chunk of Pork Ribs several weeks ago. I planned to bake it, but the weather was just too hot. I froze the Pork Ribs but I needed to empty the freezer now. I didn’t want to use oven. I don’t have BBQ. So, I just simmered them in a pot like my ‘Adobo Inspired Pork Kakuni’. This might be the easiest method to cook Pork Ribs.
Makes
2 to 3 Servings
Ingredients
800g Pork Ribs
2 cups Water *plus extra as required
2 cloves Garlic *crushed
1 small pieces Ginger *grated
2 to 3 Dried Chilli *OR Chilli Flakes as required
4 tablespoons (1/4 cup) Sake
2 tablespoons Sugar
2 tablespoons Soy Sauce
1 tablespoon Dark Soy Sauce
2 tablespoons Rice Vinegar
2 Bay Leaves *optional
Method
- Insert a knife between bones and separate Pork Ribs.
- Place all ingredients in a pot. Add extra Water to cover if required.
- Bring to the boil and remove any unwanted scum and blood on surface. Lower the heat, cover with a lid, and simmer for 1-2 hours OR until soft, adding extra Water if required.
- *Note: This process can be done much more quickly using a pressure cooker. Reduce the amount of Water to 1 cup and cook under pressure for about 20 minutes.
- Remove the lid, and simmer until the sauce is thickened.
