Pear_Upsidedown_Cake

When you find some Pears in your fruit basket have turned very ripe and too soft and nearly rotten (but NOT rotten yet), what do you do? I always make this cake. This recipe is made for two pears. If you use more pears, naturally you need more cake batter and a larger cake tin. Tinned pears can be used, but the taste is not the same.


Cake Tin

Use a small cake tin. I use 20 x 12cm tin.

Ingredients

2 Very Ripe Pears
1 to 2 tablespoons Brown Sugar
50g Butter *melted
1/4 cup Sugar *OR 1/2 cup for sweeter cake
1 pinch Salt
2 Eggs
1 cup Self-Raising Flour
1/2 cup Milk
1 teaspoon Vanilla Extract

Method
  1. Preheat oven to 180℃. Line a cake tin with baking paper. Sprinkle Brown Sugar on the baking paper evenly.
  2. Peel skin and slice Pears and arrange the slices on the baking paper.
  3. Mix melted Butter, Sugar and Salt until creamy, add Eggs and Vanilla and mix well. Add Flour and Milk, and mix until smooth.
  4. Pour the mixture over the Pear slices, smooth the surface, and bake for 30 to 35 minutes or until cooked. Set aside to cool before turning onto a plate.
