When you find some Pears in your fruit basket have turned very ripe and too soft and nearly rotten (but NOT rotten yet), what do you do? I always make them into this cake. This recipe is made for two pears. If you use more pears, naturally you need more cake mixture and a larger cake tin. Tinned pears can be used, but the taste is not the same.
Cake Tin
Use a small cake tin. I use 20 x 12cm tin.
Ingredients
2 Very Ripe Pears
1 to 2 tablespoons Brown Sugar
50g Butter *melted
1/4 cup Sugar *OR 1/2 cup for sweeter cake
2 Eggs
1 cup Self-Raising Flour
1/2 cup Milk
1 teaspoon Vanilla Extract
Method
- Preheat oven to 180C. Line a small cake tin with baking paper. Sprinkle Brown Sugar on the baking paper evenly.
- Peel skin and slice Pears and arrange the slices on the baking paper.
- Make the cake mixture. Mix melted Butter and Sugar until creamy, add Eggs and Vanilla and mix well. Add Flour and Milk and mix until smooth.
- Pour the mixture over the Pear slices, smooth the surface, and bake for 30 to 40 minutes or until cooked. Set aside to cool before turning onto a plate.
