If you occasionally crave Golden Syrup Pudding like me, you should try this super quick and easy instant mug version. Ingredients are same as the oven baked version. If you have a microwave, it would take only five minutes to make it.

*I used 380ml mug and the sauce overflowed a little. Please use a large mug.

Ingredients

2 teaspoons (10g) Butter
2 tablespoons Milk
2 tablespoons Sugar
4 tablespoons (1/4 cup) Self-Raising Flour
Thickened Cream to serve

Sauce
1/4 cup Boiling Water
1 tablespoon Golden Syrup
1 teaspoon (5g) Butter
1 teaspoon Brown Sugar *optional
1/2 teaspoon Lemon Juice

Method
  1. Place Butter and Milk in a large mug, microwave for 30 seconds OR until Butter melts. Add Sugar and Self-Raising Flour, and mix well until smooth.
  2. In a heat-proof measuring jug, combine the Sauce ingredients, and gently pour it over the batter using a spoon so that the mixture won’t hit the batter directly.
  3. Place the mug on a plate as the sauce bubbles up and might overflow, and microwave for 1 to 1 & 1/2 minutes OR until cooked. I cooked for 1 minute and 10 seconds in 1000W microwave. *Note: When the sauce is bubbling up, check the pudding if it is cooked. If not, cook extra time.
  4. Enjoy hot with Thickened Cream. I added whipped Thickened Cream.
