This sauce goes well with many food. It is good with Steaks and Chicken, but it is also good with Vegetables such as steamed Broccoli. When you caramelise Onion, remember the trick ‘LEAVE IT & STIR IT’.

Ingredients

1 Onion *finely chopped
1 clove Garlic *finely chopped
1 tablespoon Oil *Today I used Canola Oil
1 pinch Salt
2 tablespoons Mirin
2 tablespoons Soy Sauce
Ground Black Pepper OR Chilli

Method
  1. Heat Oil in a frying pan over medium to medium low heat. Add Onion, Garlic and a pinch Salt, cook until caramelised. *Note: DO NOT keep stirring. If you stir constantly or too often, it won’t brown.
  2. *LEAVE IT & STIR IT: The important trick is to leave it alone for a few minutes or enough to brown, then stir. You repeat this ‘Leave it & Stir it’ until it is nicely caramelised.
  3. Add Mirin, Soy Sauce and Black Pepper OR Chilli, simmer for a minute, and it’s done. *Note: To thin the sauce, add a small amount Sake (Rice Wine).
